The 67,000-square-foot meat laboratory was renovated and reopened with AAI funding in 1998. The USDA-inspected facility is co-managed by the departments of Animal Science and Food Science and Human Nutrition that utilize the classroom and research spaces for the understanding and improvement of meat chemistry, muscle growth, meat quality and meat microbiology.
